A few good things we've made in the past week or so, but haven't had time to blog about:
An avocado red onion mixture thingy that we used for shrimp fajitas. Pretty great.
A well-rounded meal, for once. Raspberry chipotle glazed chicken with sauteed potatoes, stuffing, and corn. Pretty solid.
Best omelet ever. Stuffed with cheese, chorizo, shallots, and the like. Awesome.
Krautspaetzle. I had never had it before, but it was really pretty good, although I think I would add lentils and German sausage next time. The spaetzle itself was great.
Mustard-glazed pork with salad and couscous. I ate like a fat kid that night.
That was today's lunch: Roasted poblano peppers, stuffed with spanish rice, black beans, and chorizo. It was awesome.
Yes, we are still mostly alive, but we've been really boring. We've been working crazy hours lately (especially Pan, of course, who is currently on a 30-hour call), so I'm just glad when I don't have to eat something by Marie Callender or something out of a bag. Pan hasn't had time to knit in her roughly one hour of awake time at home per day.
But everything's going well for the most part. Our lemon tree is starting to bear some small fruit and the weather here has been great, in the mid-70s and sunny all last week.
Anyway, Happy Valentine's Day to anyone who manages to still check this after such a long absence.
Hope everyone is having a wonderful day with family and friends! We're spending a low-key, low-stress day at home and I cooked my first turkey!

It was mighty tasty. Not dry at all and good flavor. I told Jerm he could eat the turkey leg Fair-Style, since I didn't want any of the dark meat. He did not hesitate.

We also had stuffing from scratch, mashed potatoes, green bean casserole, corn and green fluffy salad. We're too full for pie right now, so we'll eat pumpkin pie later tonight! Everything turned out well and I'm pretty proud of both the turkey and the fact that I didn't get stressed out. Plus, everything was ready at the same time! We miss our families and wish we could spend time with you today! And, yes, we went around the table (ok, we both said) to say what we are thankful for!
This was really, really good. I had never made chimichurri before, but this was a good first effort, although I already have ideas on how to improve it.
Jerm had been craving some sort of italian sandwich, and I picked up a big huge link (seriously the whole package was one link of sausage, like you'd get from a butcher shop) of italian sausage the other day. I'm lazy and don't like to cook elaborate meals on my one day off a week (it interrupts my inevitable afternoon nap!), so I tossed the sausage in the crockpot with 3 onions, a can of diced tomatoes and some spices. Chopped it up and made a delicious sandwich with some mozzarella and spaghetti sauce. I ate mine on pasta which was equally delicious. Yum!

Shrimp & Grits. These pictures aren't great, but trust me when I say that this is one of the most delicious things I've ever made. Cheese grits first. Topped with shrimp, sausage and other delicious flavors. YUM. YUM.
Jerm's birthday cheesecake. Mocha chocolate chip. Very, very good. I'll try and get a better live action pic, but I haven't managed to get a nice photogenic slice yet. HAPPY BIRTHDAY, JEREMY!!
Dinner last night was Chicken Pesto Pizza. Yum. I highly recommend Trader Joe's pre-made pizza crust, beats the heck out of the Pillsbury stuff and only costs a buck. I'm going to stock up next time we go!
Tonight we had Southwestern Stuffed Peppers. Poblano peppers stuffed with a tasty mix of onions, rice, ground turkey and tomato sauce. Super easy and VERY delicious.
Unfortunately, Pan probably won't be posting much for awhile, since she's scheduled to work 84 freaking hours this week!
That's also why I had to eat this delicious pizza by myself. It was pretty easy, since I used pre-made dough and pre-chopped pancetta, both courtesy of the Chapel Hill Trader Joe's. We didn't have any mozzarella and I was too lazy to run to the store again today, so I grated some muenster and put it on the pizza after it had cooked for a few minutes. It was the first time I used the pizza stone, but it worked really well.
Probably needless to say, but the pancetta, muenster, pepperoni, and red pepper pizza was awesome. Hopefully, Pan enjoys the leftovers, if/when she gets off of work.
We've had 2 nasty storms in the past couple of weeks, which arise really suddenly and have massive rain, some hail, and 60+mph wind. We lost power for a couple hours and electric lines and trees were down all over the place.
We watched the strong winds blow on our tree for a really long time, to the point it looked like it was snapped in half. Thankfully, this was our only real damage, and none was done to the house:
Our neighbors weren't so lucky though, as they had a big thick tree split right in half and land on their fence. The weather here is weird.
Sort of weird, but we made calzones the other day and I had a leftover piece of Rosemary-Garlic Chicken. I decided to make my calzone with chicken. I could have made it fancy with Roasted Red Peppers or Sun-Dried Tomatoes, but I didn't. Regardless, it was still pretty tasty! Geez. It took like 783 tries to get these pics to upload. Weird.

And now, for the Very Delicious Thing. Homemade Deep Dish Pizza! Inspired by YumSugar
It was quite tasty, if I do say so myself.
My "tutorial" follows, mostly so I can look back if I ever want to make this again!
Make dough from YumSugar recipe. This dough is enough for 2 pizzas, I think. I used a little more than half of it, but it was a touch too thick. Let rest covered for 4 hours. While the dough rests, make a tomato sauce. You could use jar sauce, but I didn't want to drop the $4 for a jar of sauce, so I just whipped up a quick marinara. When dough is almost done resting, pre-cook your Italian Sausage for 5ish minutes, mainly to flatten it out, and get some of the grease out. Now that the dough has risen, punch it down and turn it out onto a clean surface. Knead just a bit. Press dough into a well greased 10" springform pan. Now you're ready to build the pizza. Layer in your cheese first. We used fresh mozzarella, that I sliced thin and squeezed between a couple paper towels to pull out any extra moisture. Next, layer in the sausage. You'll want to take your slightly cooked, slightly cooled sausage and press between paper towels in small pieces. This does two things. First, it helps flatten out the sausage, so you can make a managably thin layer. Secondly, it helps get out quite a bit of the grease, to help prevent the crust from getting too soggy. Cover with a generous layer of sauce, and pop in a 425 degree oven for 40 minutes. I sprinkled it with some parmesan with about 5 minutes left in the cooking time.
After cooking, let sit for 10 minutes, so it won't explode when you cut it. Remove the ring from the springform pan. Don't freak out, the crust will hold in the ingredients, as long as you pushed it up the sides of the pan before cooking. Slice, take lots of pictures, and enjoy! Yum! We didn't have a good idea for dinner tonight- we wanted mexican, but I used up all the cheese making Mac & Cheese the other night, so traditional mexcian food was out of the question. So, we improvised.
