A Taste of Summer!




Yummy! Key Lime Pie-scream Sandwiches! Sorry, is that too Rachael Ray of a title? How about Key Lime Pie Ice Cream Sandwiches? Anywho, whatever you call them, they are delicious!

I adapted the ice cream recipe a bit from a Cooking Light Recipe, and then decided that key lime and graham cracker go together quite well, so I adapted it into an ice cream sandwich! This literally tastes exactly like key lime pie, and could not be easier. I also thought about putting the ice cream into a graham cracker crust and topping with whipped cream for a key lime ice cream pie. I hope you enjoy these as much as I did!


Key Lime Pie Ice Cream Sandwiches

3/4 cup fresh squeezed lime juice (2/3 cup if using Key Lime juice)
1 cup half-and-half
1 cup skim milk
Pinch of salt
1 can (14 oz) fat-free sweetened condensed milk
Zest of 2 limes

10 graham crackers, broken into halves

Whisk first 5 ingredients together in a bowl. Pour into ice cream maker and freeze according to your machine's directions. Stir in zest at end of freezing cycle. Spoon into a freezer safe bowl and freeze for 45 minutes. Place 10 graham cracker halves onto individual pieces of plastic wrap. Scoop 1/2 to 2/3 cup of ice cream onto each graham cracker and cover with another graham cracker half. Wrap tightly in plastic wrap and return to freezer. Freeze for several hours. Enjoy!

NC Ain't So Bad.

For the last few weeks, I've been indulging myself in as many things Carolina as possible, eating some fantastic shrimp, chorizo, and cheese grits, eating at Bojangle's and Cook Out, drinking Cheerwine and Sweet Tea. It's also been hotter than the surface of the sun here recently, thanks to some record highs, which really made me want to drink some Boulevard Wheat.

Unfortunately, I hadn't been able to find anything to replace my favorite locally-distributed beers. Finally, I was able to find a good source of high-quality beers and had my first taste of the renowned Dogfish Head IPA. It was glorious.


I'm learning that as much as I loved all things Kansas City, especially the beer and barbecue, North Carolina at least compensates a little bit with its access to East Coast craft beers like this. I still wouldn't mind some Boulevard, O'Dell's, or New Belgium beers or some OK Joe's, of course. . .

Strict Orders

I am under strict orders to start posting some pics on the blog, because Jeremy is bored and all the pictures are on my computer.

So, here you go.



These are just a few of my pictures from graduation. We don't have any of Jerm's graduation, because he decided to skip out on it.



I wouldn't have missed mine for the world, but then again, walking down the hill in a green hood has been on my list of things to do for some time. Mission accomplished! The only thing I wish I had pictures of was our wild champagne spraying when they announced the School of Medicine. I gave the camera back to Jerm before the ceremony so it wouldn't get ruined, though. Alas.


All in all, it was a great weekend.

The only damper was the fact that we were exhausted at the end of the weekend, and with the impending move on Thursday, there wasn't any time to rest!
